I think the calculation is something along the lines of 120 parry + 80 dex = 30% block chance, 120 parry + 60 dex = 25% block chance. So 60 dex is no slouch. I run 40 dex and drink a greater agility pot to take me to 60.

Same template as yours with 245 stat cap. I go 90 str/115 int/40 dex. Ideal dex with parry is obviously 80 which gives you a 30% block chance. I run 40 dex, drink a greater agility when pvp'ing which takes me to 60 and gives me a 25% block chance. If I were you I'd go 90 str/110 int/40 dex, and try and get my hands on a +25 stat =)

You can use jewels.
Not sure, but there was a tamed animal calculator of some sort on stratics that allows you to input their stats and it calculates how good the pet is.
Honor. Work up your honor, it allows you a 1-2 minute pet ignore which is perfect for taming.
